BAINGAN BHARTA
This is the best bharta recipe ever! Who doesn`t love a good baingan bharta for lunch ? Everyone does! This is the quickest recipe of it. The best part about this bharta is the smoky taste from roasting the eggplant on direct flame. Make sure to remove the skin from the eggplant once roasted. The garlic and green chillies adds that wow factor when roasted together along this the eggplant. You can add any more vegetables of your choice, but this recipe is surely foolproof. INGREDIENTS
For the Roasted Brinjal
2 big Eggplant/brinjal
12 Garlic Cloves
½ Green chilli
Oil for Brushing
To add later
2 tbsp Mustard oil
1 tsp mustard seeds
¼ tsp hing
1 tbsp Chopped Ginger
1 cup Onions (chopped)
1 cup Tomatoes (chopped)
Salt to taste
1 tsp Turmeric powder
½ tsp Red chilli powder
2 tsp Coriander powder
4 tbsp Chopped Coriander leaves
METHOD
For the Roasted Brinjal
Brush and coat the brinjals with oil.
With a knife, cut slits on each brinjal vertically, fill in the garlic cloves and green chilli in these slits.
Roast this brinjal on an open flame for 5-7 minutes until properly cooked and charred.
Once done, let it cool down for a minute and then removes the burnt peel of the brinjal.
Transfer this to a bowl and with the help of a masher, mash the brinjal along with the garlic and green chilli.
How to proceed
In a pan, heat mustard oil and mustard seeds.
Add in chopped ginger, hing and onions. Followed by chopped tomatoes and salt to taste. Cook for a minute.
Add in coriander powder, red chilli powder and turmeric powder. Mix until well combined.
Finish by adding the mashed roasted brinjal and coriander leaves. Cook for a minute.
Serve hot with roti or rice.
