BANYARD MILLET LEMON RICE
Lemon rice is a south Indian classic and everyone`s favourite. This is a healthy, fiber packed lemon rice recipe made from banyard millets. The millets replace the rice in this recipe. The consumption of barnyard millet can possess various health benefits against diabetes, cardiovascular diseases, obesity, skin problems, cancer and celiac disease. The flour/grain of barnyard millet is gluten-free and can be incorporated into the diet of celiac and diabetic patients. Hence this rice recipe is packed with nutrition and is so very tasty! INGREDIENTS
½ Cup Barnyard Millet (soak Overnight)
1 tbsp Lemon juice
2 tbsp Slit cashews
1 tbsp Oil
¼ tsp Mustard seeds
¼ tsp Turmeric powder
4-5 Curry leaves
¼ tsp ginger green chilli paste
1 tsp Chana dal
1 tsp Urad dal
A Pinch of hing
Salt to taste
METHOD
For the banyard millet
Soak the banyard millet overnight in water.
Pressure cook for 2 whistles, strain and let it cool down.
How to proceed
In a pan heat oil and sauté mustard seeds, hing, chana dal , urad dal,cashews until golden brown.
Add the curry leaves, ginger green chili paste and boiled banyard millet.
Add in turmeric, salt to taste and lemon juice.
Mix well and serve hot.
