BANYARD MILLET UTTAPPAM
Uttappa is a south Indian classic and everyone`s favourite. This is a healthy, fiber packed uttappa recipe made from banyard millets. There is no rice used in this uttappa recipe. The consumption of barnyard millet can possess various health benefits against diabetes, cardiovascular diseases, obesity, skin problems, cancer and celiac disease. The flour/grain of barnyard millet is gluten-free and can be incorporated into the diet of celiac and diabetic patients. Hence this uttappa is packed with nutrition and is so very tasty! INGREDIENTS
- 3/4 Cup Banyard millet
- 1/4 Cup Urad Dal
- 1 tsp Methi seeds
- 2 tbsp Poha
- Salt to taste
- ½ Cup water
- ½ Cup Finely chopped onions
- 2 tbsp Podi masala
- 1 tsp red chili powder
- 2 tbsp chopped coriander
- Oil to make the uttappam

METHOD
- Soak banyard millet, urad dal, methi seeds and poha together in water overnight.
- Once soaked strain and blend into a smooth batter by adding ½ cup water.
- Cover and let the batter sit for an hour.
- Add in salt to taste in the batter right before making the uttappam.
- Heat a pan, with the help of oil make uttappams using this batter. You can make small or big uttapams as per your preference
- Top up with chopped onions, coriander, podi masala and red chilli powder.
- Brush some oil, flip and cook on both sides.
- Serve hot with green chutney
