Batata Vada Recipe|Renu dalal

INGREDIENTS

  • 3 potatoes boiled, peeled and mashed
  • ½ tbsp oil
  • ½ tsp rai (mustard seeds)
  • ½ tsp cumin seeds ( jeera)
  • ½ tbsp ginger , green chilli paste
  • 4 kadi pata (curry leaves )
  • 3 tbsp chopped onions
  • ¼ tsp turmeric powder (haldi)
  • ¼ tsp garam masala
  • ¼ tsp red chilli powder
  • Salt to taste
  • 1 tbsp chopped coriander

For the besan mixture -

  • ½ cup besan
  • ¼ cup water
  • Salt to taste
  • Pinch of turmeric

Oil for deep frying

To Serve

  • Tamarind chutney
  • Green Chutney
  • Peanut Powder

METHOD

For the potato filling

  1. In a vessel, heat the oil, add the mustard seeds, jeera, green ginger chilli paste and sauté for 15 seconds
  2. Add the onions, haldi, garam masala, curry leaves and sauté for 15 seconds.
  3. Add the mashed potatoes, coriander, red chilli powder and salt to taste and cook for 2 minutes.
  4. Allow the mixture to cool.

For the besan mixture

  1. Mix all the ingredients together.

How to proceed

  1. Oil your hands and make rounds of the potato filling.
  2. Heat the oil for frying.
  3. Place the potato rounds in the besan mixture and deep fry until golden brown.

To serve

  1. Serve hot with green chutney, chilli powder, ketchup or tamarind chutney
