CORN PANKI
Fusion recipe of an all time favourite. Panki is a famous Gujarati recipe made using rice and steamed between banana leaves. This snack recipe is a great dish to serve at parties or with evening tea. Rice Panki is super easy to make. So here's an even better version of this all time classic, Corn Panki. This panki batter has sweet corn in it and so it gives the panki that nice sweetness. Serve it with some coriander chutney or sweet curd. Made with easily available ingredients, Corn Panki recipe will become your new favourite Gujarati dish that tastes absolutely yum! 7-8 small pankis
INGREDIENTS
½ cup sweet corn
1 tbsp coriander
½ tsp ginger green chilli paste
1 tbsp rava
2 tbsp besan
8-9 banana leaves
1 tbsp curd
1 tbsp rice flour
¼ cup water
Pinch of turmeric powder
Salt to taste
METHOD
In a blender jar blend sweet corn to make a puree.
Transfer to a bowl and mix the ingredients for the panki batter.
Put oil on one side of the banana leaf and place on a non stick tawa.
Put some batter on the greased side of the banana leaf and make a thin layer.
Cover with another banana leave.
Cook on a non stick tawa on both sides till the panki is done. Brown spots will come on the leaves. The panki must come out easily.
Serve immediately with green coriander chutney.
