EGGLESS CHOCOLATE SPONGE CAKE

INGREDIENTS
To sieve
Dry ingredients
1 ½ Cup Maida
1 tsp baking powder
1 tsp baking soda
¾ cup Cocoa Powder
Pinch of salt
Wet ingredients
1 Cup Curd
¾ Cup powdered Sugar
¾ cup oil
½ tsp Vanilla essence
½ Cup Milk
1 tsp Vinegar
METHOD
Pre-heat the oven to 180° and line an 9 inch round cake pan with butter paper.
In a bowl sieve together cocoa powder, flour, salt and baking powder and set aside.
In a separate bowl add the curd, mix Whisk together sugar and oil in a separate bowl until sugar dissolves.
Now pour the curd mixture to the oil mixture and mix in the vanilla essence.
Mix together milk and vinegar in a bowl, to prepare the buttermilk.
Add in the milk mixture to the wet ingredients and whisk well.
Gently fold in the dry ingredients and mix until everything is mixed properly. Do not over mix at this stage.
Transfer the batter to the lined cake pan
Bake at 180C for 20 minutes or only until a toothpick comes out clean.
