GAAJAR KA HALWA
All time classic.Carrots are healthy too. Who doesn’t like Gajar Halwa right ? Here is our take on the classic Gajar Halwa! Do try it, a very popular sweet in the winter months in north india. You can deepfreeze and use whenever you wish to. Healthy and nutritious it makes a great after dinner sweet too.

INGREDIENTS
4 cups grated carrot
2 tbsp ghee
6 tbsp sugar
1 tsp cardamom powder
1 ½ cups full fat milk
For garnish
2 tbsp finely chopped cashew nuts (fried or roasted)
1 tbsp rasins
METHOD
How to proceed
Heat the ghee in a non-stick frying pan.
Add the grated carrot and cook for 3 to 4 minutes stirring continuously.
Add the sugar, milk and cardamom powder, and cover with a lid and let it simmer for 10 minutes. Stir occasionally.
Remove the lid,stir continuously and cook till the liquid evaporates.
You can deep freeze the halwa and use at your convenience.
To serve
Serve hot garnished with cashew nuts and rasins
