An all time maharashtrian classic and everyone`s favourite! Kothimbir vadi are steamed and deep fried coriander fritters made with gram flour and rice flour! These are super tasy and you won`t be able to resist finishing them all. Sesame seeds enhance the crispiness and lifts up the texture of these vadis. You can even add chopped peanuts or tamarind chutney but this recipe is amazing as it is. Do make them and we promise you won`t regret it, they are extremely easy to make and can be made in a jiffy, try them and let us know how you like them!

INGREDIENTS
1 Cup Chopped Coriander
½ Cup Besan
2 tbsp Rice flour
2 tsp Ginger Green Chilly Paste
¼ tsp turmeric powder
1 tsp Red chilli powder
½ tsp coriander powder
½ tsp carom seeds
½ tsp Jeera
1 tbsp Sesame seeds
½ tbsp Sugar
4 tbsp Water
¼ tsp soda Bicarbonate
Salt to taste
Other ingredients
Oil for frying
Sesame seeds
To serve
Green Chutney
Ketchup
Tamarind Chutney
METHOD
In a plate, combine all the ingredients, mix well and make a dough.
Divide this dough into 2 equal parts. Shape and make 2 cylindrical rolls.
Coat the rolls evenly with sesame seeds.
Steam these two rolls for 5-6 minutes in steamer.
Let these cool down once steamed and then cut out slices from these rolls.
In a pan heat oil for frying and deep fry these slices until golden brown.
Serve hot with green chutney, ketchup or tamarind chutney.
