Lentil Coconut Soup

INGREDIENTS
2 tbsp Masoor dal (soak overnight)
2 tbsp yellow moong dal (soak overnight)
¼ cup finely chopped onions
½ tsp ginger garlic paste
1 Cup coconut milk
Salt pepper to taste
½ tsp red chilli powder
½ tsp turmeric powder
¼ tsp jeera powder
1 tsp olive oil
For the lemon grass water
¼ cup Lemon grass
1 Cup water
METHOD
For the dal
Pressure cook the two dals together with ½ cup water for 2 whistles.
Once cooked blend the dals together to make a smooth paste.

Boil lemon grass and water together until the water extracts the lemongrass flavour.
Strain.
How to proceed
In a pan heat oil and saute ginger garlic paste and onions.
Add in the dal paste, turmeric powder, red chilli powder and jeera powder.
Mix well and add in coconut milk and lemongrass water. Cook for 2 minutes.
Add in salt to taste and serve hot.
