MANGO COCONUT CHIA PUDDING

One super healthy bowl of goodness. This pudding can be eaten for breakfast or served as dessert too.
This pudding is super healthy and it is vegan. Made with coconut milk and mango, a combination which
works like a dream team together. Top up with mix seeds. Chia seeds are super healthy, full of fiber. It
improves heart health, reduces cholesterol levels and promotes intestinal health. Do make this amazing
healthy chia pudding and enjoy!

MANGO COCONUT CHIA PUDDING Recipe|Renu dalal

INGREDIENTS

For the mango mix

  • 1 ½ Cup Mango Chopped
  • 1 Cup Coconut Milk
  • 3 tsp Sugar

To add later

  • 1/8 Cup Chia Seeds
  • 2 tbsp Coconut Milk

For garnish

  • Chopped Mangoes
  • Mix Seeds (Sunflower Seeds, Pumpkin Seeds, Dried Berries, Watermelon Seeds)

METHOD

  1. In a bowl, soak 1/8 Cup Chia Seeds in ¾ Cup Water.
  2. Keep it aside overnight.

For the mango mix

  1. In a blender jar, add chopped mangoes, coconut milk and sugar.
  2. Blend into a smooth puree.

How to proceed

  1. Mix together the blended mango mix with soaked chia seeds.
  2. In serving glasses, swirl a spoon full of coconut milk around the glass.
  3. Fill in the chia seeds pudding.
  4. Garnish with chopped mangoes and mix seeds.
  5. Serve chilled.
