MATAR PARATHA
Matar Paratha is a classic Punjabi paratha with green peas. It is an unleavened flatbread with a green pea mixture. You will forget all parathas once you try these and it will make you fall in love with green peas even more. Make sure to used boiled green peas and mash them instantly. The besan gives a binding to the mixture. The lovely tadka of jeera and saunf works like a dream! Do try this paratha recipe and let us know how you like it.

INGREDIENTS
For the Paratha Dough
1 Cup Wheat flour
1 tbsp oil
Salt to taste
Water to make the dough
For the filling
1 Cup Boiled Green Peas
¼ tsp cumin seeds
½ tsp Garam Masalar
¼ tsp kasturi methi
¼ tsp Fennel Seeds
¼ tsp ginger chilly paste
¼ tsp hing
1 tsp oil
½ tsp besan
1 tbsp chopped coriander leaves
Salt to taste
To serve
Curds
Achaar
METHOD
For the filling
In a bowl, with a potato masher, mash boiled green peas.
In a pan, heat oil.
Add in hing, cumin seeds, fennel seeds, ginger chilly paste, kasturi methi and Besan. Saute well for ½ a minute.
Add in the mashed green peas, salt, garam masala and coriander leaves.
Mix well and set aside to cool down the filling.
How to proceed
Make a dough and mix well all the ingredients. Make 4 round balls of the dough.
With a help of a little flour roll the dough and make a small circle. Place ¼ of the filling in the centre. Close the sides of the dough and make a round again.
With a help of a little flour roll out the parathas.
Put some oil on the tava and cook the parathas on both sides.
Serve hot with curds and achaar.
