MEDU VADA
Here’s our version of the All time favourite and all time classic Medu Vada! These are crispy, fluffy & delicious donut shaped lentil fritters. Made from Urad Dal and these are so tasty you won’t be able to stop. Serve with cold coconut chutney and piping hot sambhar. These Deep fried Medu vadas are all you need for your tiffins/ breakfast ! INGREDIENTS
For the batter
¾ Cup Urad Dal
½ Green chilly
1 tsp Chopped Ginger
Salt and Pepper to taste
1 tbsp Chopped Coriander
A pinch of soda bi carbonate
For the tempering
6 – 7 Chopped Curry leaves
½ tsp Jeera
Pinch of Hing
1 tsp Whole Urad Dal
Oil for frying
To serve
Chutney and sambhar
METHOD
For the batter
Soak Urad dal in 2 Cups water for 2-3 hours.
Strain and add in a blender.
Add in green chilly, ginger, salt and pepper.
Blend and make a coarse batter.
Transfer this to a bowl. Add soda, coriander and mix well. Rest this for 5- 10 minutes.
For the tempering
In a pan dry roast jeera, chopped curry leaves, hing and whole urad dal until the dal turns golden brown.
How to proceed
Add this tempering to the batter and mix well.
Heat oil for frying the medu vadas.
Wet your hands with water and some oil and take some batter in your palm.
With your greased finger poke a hole in the center and invert your palm over the oil and carefully drop the vadas this way.
Fry them till golden brown.
To serve
serve hot with coconut chutney and sambhar.
