PHIRNI
Phirni is a traditional dessert made with ground rice, sugar, milk and cardamoms. Make this creamy and delicious pudding. Although both phirni and rice kheer look similar, they are actually made differently. Phirni is made from ground rice, while Rice Kheer is made from whole rice. Good quality basmati rice is the preferred rice to make phirni. Make sure to grind the rice into a coarse powder and not a fine powder. You can add your choice of flavours and spices too. This one has cardamom powder, Rose syrup and saffron. You can serve this cold in earthen pots to get that earthy flavour. Do make for your loved ones and let us know how they like it.

INGREDIENTS
¼ Cup basmati rice
1 ½ Cup milk
3 tbsp sugar
1 tsp rose syrup
½ tsp cardamom powder
5-6 kesar strands (soaked in warm water)
METHOD
for the rice
In a grinder blend basmati rice into a coarse powder.
Make sure not to blend into a fine powder.
How to proceed
In a pan boil milk and add crushed rice.
Cook for 5 - 7 minutes or until rice is cooked.
Add in sugar, cardamom powder, rose syrup and saffron. Let it cook for 2-3 minutes.
Mix well and let it cool down.
Refrigerate and seve cold.
