INGREDIENTS

    • 1 ½ cup boiled broccoli
    • 1/2 cup fresh paneer
    • 2 garlic cloves
    • 4 - 5 basil leaves
    • 2 tbsp chopped coriander
    • 1/4 cup milk
    • 1/2 cup water
    • 1/2 tbsp olive oil
    • Salt pepper to taste
    • 1/2 cup diced red capsicum
    • 1/2 cup diced yellow capsicum
    • 1/2 cup diced green zucchini
    • 1/2 cup sliced boiled baby corn
    • 1 cup water
    • 1/2 tsp oregano
    • 1/2 tsp thyme
    • 1/2 tsp chilli flakes
    • ½ tbsp Butter
    • Salt to taste
    • ¼ tsp sugar

METHOD

    For the gravy

    1. In a blender jar add together broccoli, basil, coriander, paneer, milk, water, oil, garlic and salt pepper to taste.
    2. Blend into a smooth paste.

    How to proceed

    1. In a pan heat butter and sauté oregano, thyme, chilli flakes.
    2. Toss in the veggies along with salt to taste. Cook for 2-3 minutes.
    3. Mix in the prepared puree, sugar and water. Cook for another 2 minutes.
    4. Serve hot with rice.
