INGREDIENTS
- 1 ½ cup boiled broccoli
- 1/2 cup fresh paneer
- 2 garlic cloves
- 4 - 5 basil leaves
- 2 tbsp chopped coriander
- 1/4 cup milk
- 1/2 cup water
- 1/2 tbsp olive oil
- Salt pepper to taste
- 1/2 cup diced red capsicum
- 1/2 cup diced yellow capsicum
- 1/2 cup diced green zucchini
- 1/2 cup sliced boiled baby corn
- 1 cup water
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp chilli flakes
- ½ tbsp Butter
- Salt to taste
- ¼ tsp sugar
METHOD
- In a blender jar add together broccoli, basil, coriander, paneer, milk, water, oil, garlic and salt pepper to taste.
- Blend into a smooth paste.
- In a pan heat butter and sauté oregano, thyme, chilli flakes.
- Toss in the veggies along with salt to taste. Cook for 2-3 minutes.
- Mix in the prepared puree, sugar and water. Cook for another 2 minutes.
- Serve hot with rice.
