INGREDIENTS

    For the base

    • 1/2 cup green peas
    • 1 1/2 cup Spinach
    • 1 tsp ginger garlic green chilli paste
    • 1/2 tsp turmeric powder
    • Salt to taste

    To add later

    • 2 tbsp Roasted Besan
    • 2 tbsp Rava
    • 1/4 cup chopped coriander
    • 1/2 cup mashed potato
    • 1/4 cup grated paneer
    • 1/4 tsp red chilli powder
    • 1/4 tsp garam masala
    • 1/2 tsp aamchur
    • ¼ tsp Chaat Masala
    • Salt to taste
    • 2 tbsp sliced kaju (cut in half, roasted)
    • Oil for shallow frying

    To serve with

    • Green chutney

METHOD

    For the base

    1. In boiling hot water blanch green peas and spinach. Cook for a minute.
    2. Transfer to an ice bath.
    3. Strain this and let it dry.
    4. In a blender jar, add the boiled vegetable, turmeric powder, ginger garlic green chilli paste and salt.
    5. Blend well to get a smooth paste.

    How to proceed

    1. In a plate mix together spinach paste, potatoes, besan, rava, paneer, red chilli powder, garam masala, aamchur, chaat masala and salt to taste.
    2. Mix well to make a dough. Divide into equal parts and form kebabs.
    3. Place a piece of roasted kaju in the centre.
    4. Heat oil in a pan and shallow fry the kebabs until crispy and well done.
    5. Serve hot with chutney.
