Little millet fried rice is a light and flavourful alternative to regular fried rice, made using cooked millet tossed with vegetables and simple seasonings. The grains stay separate when cooked properly, giving a texture similar to rice without becoming sticky. It cooks quickly and works well with everyday vegetables and mild spices. Cooking the millet just right and allowing it to cool slightly before tossing helps maintain a good texture. Ideal as a quick meal or lunch option, served hot on its own or with a simple side.

INGREDIENTS

    • 2 Cups boiled little millet
    • 1/4 cup finely chopped spring onions
    • 1/4 cup finely chopped carrots
    • 1/4 cup finely chopped green capsicum
    • 2 tbsp finely chopped yellow bell pepper
    • 2 tbsp finely chopped red bell pepper
    • 1/2 cup chopped spring onion green part
    • 1/2 tbsp ginger garlic paste
    • Salt pepper to taste
    • 2 tsp soya sauce
    • 2 tsp Kashmiri red chilli paste
    • 1/2 tbsp sesame oil

METHOD

    1. In a pan heat sesame oil and sauté ginger garlic paste, spring onion.
    2. Mix in carrot, capsicum, bell peppers, salt to taste. Cover and cook for 2 minutes.
    3. Add in red chilli paste, soya sauce, pepper, spring onions greens and boiled little millet.
    4. Mix well and cook for 2 minutes.
    5. Serve hot.
