Mustard raita is a simple yogurt-based side dish flavoured with ground mustard seeds and mild spices. It has a slightly sharp and tangy taste that pairs well with everyday meals. Using fresh curd and balancing the mustard flavour is key so it does not become too strong. The texture is smooth and can be adjusted by adding a little water or buttermilk. It works well as a cooling side with rice dishes, parathas, or light meals.

INGREDIENTS
- 1 cup curd
- 3/4 cup grated cucumber
- Pinch of Hing
- Salt to taste
- 1/2 tsp mustard seeds (rai)
- 1 tbsp water
- 1/2 tbsp mustard oil
For the mustard paste
METHOD
- In a mortar Pestel add in mustard seeds and start to pound it.
- Add water in batches and keep pounding it.
- Once pasty, mix in the mustard oil and make a smooth paste.
- Squeeze out excess water from the grated cucumbers.
- In a bowl whisk curd until smooth.
- Mix in the grated cucumber, mustard paste, hing and salt to taste.
- Serve chilled.
