Quinoa paratha is a wholesome Indian flatbread made using quinoa flour combined with mixed vegetables and mild spices. The dough comes together easily and rolls out into soft parathas that cook well on a tawa with a light crisp on the outside. Adding vegetables not only improves texture but also makes it more filling and balanced. Since quinoa flour can be slightly delicate, mixing it with binding ingredients and kneading it well helps in rolling without cracks. Best served hot with curd, pickle, or a simple chutney for a healthy everyday meal.

INGREDIENTS
- ¾ cup quinoa flour
- 2 tbsp wheat flour
- 3 tbsp grated carrots
- 3 tbsp grated cabbage
- 3 tbsp chopped capsicum
- 3 tbsp finely chopped onions
- 1 tbsp chopped coriander
- 1/4 tsp ginger garlic paste
- Salt to taste
- Oil to make the parathas
METHOD
- In a plate mix together all the ingredients.
- With some water, knead a soft dough.
- Divide into 6 equal portions.
- Roll out into parathas, with the help of some flour.
- With oil, roast the parathas on both the sides until well done.
- Serve hot with curd or pickle.
