INGREDIENTS

    • 6 semi thick beetroot slices
    • 1 tbsp olive oil
    • Salt Pepper to taste

    Other ingredients

    • 1 tbsp pesto sauce
    • 2 tbsp feta cheese
    • Chopped parsley

METHOD

    For the beetroot

    1. Mix the sliced beetroot with olive oil, salt and pepper.
    2. Bake these beetroot slices for 6-7 minutes at 180C.
    3. Once done, flip them and bake again for 6-7 minutes.

    How to assemble

    1. In a plate place the roasted beetroot slices.
    2. Top up the slices with some pesto sauce.
    3. Garnish with feta cheese and parlsey.
    4. Serve immediately.
