INGREDIENTS
- 7-8 Slices of Silken Tofu
- Salt Pepper to taste
- ½ tbsp sesame oil
- ½ Cup boiled fresh beans (big pieces)
- ½ cup boiled sliced mushrooms
- ¼ cup chopped spring onions white part
- ¼ cup sliced red capsicum
- 2 tbsp chopped spring onion (green part)
- 1 tbsp sesame oil
- ½ tbsp red chilli garlic paste
- ¼ tsp ginger paste
- ½ tbsp soya sauce
- ½ tsp vinegar
- 1 tsp brown sugar
- ¼ cup Basil leaves
- 2 tsp corn flour
- Salt pepper to taste
- 1 ½ cup lemongrass
- 1 cup water

METHOD
- In a grill pan heat oil and roast the Tofu slices with salt and pepper to taste.
- Flip and cook on both the sides until nicely charred and Firm.
- In a sauce pan boil some water with lemongrass until fragrant
- Strain the water and keep aside.
- In a pan heat oil and saute ginger paste.
- Mix in spring onions, capsicum, mushrooms, french beans and salt pepper to taste.
- Cook for 2 minutes
- Mix in red chilli garlic paste, soya sauce, vinegar, brown sugar, basil leaves and the lemongrass water.
- Boil for 2 – 3 minutes and mix in the cornflour slurry.
- Let it cook and thicken up
- Serve hot with steamed rice or noodles.
