Valor Muthiya Sabzi is a traditional Gujarati preparation combining tender valor beans with soft muthiya, flavoured with ginger, green chilli paste, hing and jeera. Aromatic, wholesome and deeply satisfying, this dish reflects the rustic flavours of Gujarati cuisine. Best enjoyed with roti, it makes a nourishing addition to everyday vegetarian meals.

INGREDIENTS
- 2 Cups Valor Papdi split (broad beans)
- 10 Small Muthiyas (Non fried)
- 1/2 tsp Cumin Seeds
- 1 cup Water
- ¼ tsp Hing
- 1 tbsp Oil
- 1 tsp ginger garlic green chilli paste
- Salt to taste
METHOD
- In a pan heat oil and sauté jeera, hing, ginger garlic green chilli paste.
- Toss in the valor papdi, salt and water.
- Mix well, cover and cook for 5 minutes.
- Toss in the raw muthiyas and cook for another 2-3 minutes.
- Serve hot.
