Veg pongal is a soft and comforting dish made with rice, lentils, and mild spices, along with added vegetables for extra texture and flavour. It has a smooth, slightly creamy consistency and is tempered with basic ingredients like cumin, pepper, and curry leaves. Cooking the rice and dal together until soft helps achieve the right texture, while the vegetables make it more wholesome. It is easy to digest and works well for breakfast or a light meal, best served hot with chutney or sambar.

INGREDIENTS
- 1/3 cup rice
- 1/3 cup yellow moong dal
- 2 tsp ghee
- 2 ½ cups water
- Salt to taste
- 2 tbsp cashews
- 1/2 tsp jeera
- 1/2 tsp mustard seeds
- Pinch of Hing
- 6-7 Curry leaves
- 1/2 tsp ginger green chilli paste
- ½ tbsp ghee
- Chutney and sanbhar Or Curds and pickle

METHOD
- In a pan heat ghee and sauté yellow moong dal for 2-3 minutes or until fragrant.
- Toss in rice and sauté for another 2 minutes.
- Add in water, salt and mix it well.
- Pressure cook for 4-5 whistles.
- With a whisk, mix the cooked Pongal to make it a little mushy.
- In a small pan heat ghee and roast cashews until golden brown.
- Once done, add in jeera, mustard seeds, hing, curry leaves, ginger green chilli paste and mix well.
- Pour this hot over the Pongal and serve.
