This recipe includes only one ingredient and that is juicy alphonso mangoes, but it is delicious. This recipe is super easy to make and you will love absolutely love it. you have got to try it while mangoes are fresh in season.

INGREDIENTS

    • 6 alphonso Mangoes

METHOD

    1. Soak mangoes in some water for an hour.
    2. After an hour, press the mangoes gently from all sides until the flesh turns soft.
    3. The juice and seed will pop out from the mangoes.
    4. Squeeze the seeds and remove from the aam ras
    5. With a hand blender, blend and you will get a delicious aam ras.
    6. Refrigerate and serve chilled

Chef's Note from Renu Dalal:

Once you make aam ras at home from Alphonso mangoes, you will never touch the packaged version again.
The soaking is the key — a full hour in water softens the flesh so it separates easily.

Serving: Serve chilled with hot puris — a Gujarati summer tradition.
Freeze tip: Freeze in 50ml portions so you defrost only what you need.
Flavour add-on: A pinch of cardamom powder or a few saffron strands for a festive version.
