Batata Vada

INGREDIENTS
- 3 potatoes boiled, peeled and mashed
- ½ tbsp oil
- ½ tsp rai (mustard seeds)
- ½ tsp cumin seeds ( jeera)
- ½ tbsp ginger , green chilli paste
- 4 kadi pata (curry leaves )
- 3 tbsp chopped onions
- ¼ tsp turmeric powder (haldi)
- ¼ tsp garam masala
- ¼ tsp red chilli powder
- Salt to taste
- 1 tbsp chopped coriander
- ½ cup besan
- ¼ cup water
- Salt to taste
- Pinch of turmeric
- Tamarind chutney
- Green Chutney
- Peanut Powder
For the besan mixture -
Oil for deep frying

To Serve
METHOD
- In a vessel, heat the oil, add the mustard seeds, jeera, green ginger chilli paste and sauté for 15 seconds
- Add the onions, haldi, garam masala, curry leaves and sauté for 15 seconds.
- Add the mashed potatoes, coriander, red chilli powder and salt to taste and cook for 2 minutes.
- Allow the mixture to cool.
- Mix all the ingredients together.
- Oil your hands and make rounds of the potato filling.
- Heat the oil for frying.
- Place the potato rounds in the besan mixture and deep fry until golden brown.
- Serve hot with green chutney, chilli powder, ketchup or tamarind chutney
