INGREDIENTS

    • 6 urad dal Vadas

    For the beetroot curd

    • ¼ cup chilled curd
    • 2 tbsp beetroot puree
    • Salt and pepper to taste

    For the spinach curd

    • ¼ cup chilled curd
    • 2 tbsp spinach puree
    • Salt pepper to taste

    For the carrot curd

    • ¼ cup chilled curd
    • 2 tbsp carrot puree
    • Pinch of turmeric powder
    • Salt pepper to taste

    For the topping

    • Tamarind chutney
    • Black salt
    • Jeera powder
    • Red chilli powder
    • Chopped green coriander leaves

METHOD

    For the beet curd

    1. In a bowl mix everything together.

    How to assemble

    1. Place the vadas in a plate and top up with flavoured curds, tamarind chutney, jeera powder, black salt and red chilli powder.
    2. Finish by garnishing with coriander and serve immediately.
