GOBI 65

This is the perfect starter recipe to wow your guests! A simple ingredient as cauliflower taken to a whole new level. This starter balances all flavors and textures including crispy on the outside soft on the inside, has a perfect sour and spicy combination going on. This dish is also featured on the legendary film Tarla so here`s our version of the Gobi 65. A lovely twist to a simple ingredient, this recipe will get your kid`s to eat cauliflower everyday.

INGREDIENTS

    • 2 cups par boiled cauliflower florets

    To marinate

    • ½ cup curds
    • 1 tsp garam masala
    • ½ tsp chilli powder
    • ½ tsp ginger garlic paste
    • 1 tsp oil
    • 1 tsp coriander
    • Sal to taste
    • ½ tsp lemon juice

    To coat

    • 2 tbsp rice flour
    • 2 tbsp corn flour

    To saute

    • Oil
    • 1 tsp cumin seeds
    • 1 tbsp curds
    • A pinch of salt

METHOD

    1. Mix all the ingredients to marinate together.
    2. Add to the cauliflower florets and let it stay for 3 minutes.

    How to proceed

    1. Add the rice flour and corn flour to the cauliflower florets.
    2. Deep fry or air fry the cauliflower.
    3. In a vessel heat the oil, add the cumin seeds and saute.
    4. Add the cauliflower florets, curds , chilli powder and a pinch of salt.
    5. Saute for 15 seconds.

    To serve

    1. Serve immediately with toothpicks.
