SPINACH SOUP
Popeye loved spinach and so do I. This healthy and delicious soup is great for the winter months. INGREDIENTS
- 2 cups chopped spinach leaves
- 1 cup water
- 2 tbsp spring onion
- 1 tbsp olive oil
- ½ tsp oregano
- 1 cup milk
- Salt and pepper to taste
- Bread croutons
- Grated cheese

METHOD
- Heat the water and boil the spinach leaves till soft.
- In a blender blend the spinach and water.
- Sieve the puree
- In a non stick vessel heat the olive oil, add the oregano, spring onions and saute for ½ minute.
- Add the spinach puree, milk, salt and pepper to taste. Cook for 2 minutes.
- Serve hot
- Garnish with cheese and croutons
