RICE PAPAD (KHICHIYA) WITH MANGO
Roasted rice papad with chilled mango and curd mixture make a great bite. Mango is in the season, here presenting Mango in a different and unique combination but is to die for. Curd and Dil with mango which brings out that tangy sweetness with a crunchy rice khichiya base and served cold! As weird as it sounds, it is heavenly and my favorite. Dil and mango work together like a dream team. do try this and fall i love with magoes even more. once made, serve immediately.

INGREDIENTS
- 2 rice papads
- ½ cup chopped mango
- 1 cup curds
- 2 tsp fresh dill (finely chopped)
- Salt to taste
METHOD
- For the mango and curd mixture.
- In a bowl add the curds, dill, and salt. Mix well till you form a smooth paste.
- Add the chopped mangoes and mix.
- Refrigerate the filling till cold.
- Roast the rice papads on both sides. Break the rice papads into squares.
- On the rice papad squares apply the mango and curd mixture.
- Serve immediately.
