SPINACH SOUP

Popeye loved spinach and so do I. This healthy and delicious soup is great for the winter months. This drink is highly Rich in antioxidants, helps in creation of red blood cells, cure bleeding gums, improves stomach problems. Rich source of vitamins. Have this hot bowl of soup on a winter evening. This recipe is perfect for a lazy chilly day and is so healthy. serve with bread croutons and cheese.

SPINACH SOUP Recipe|Renu dalal

INGREDIENTS

Ingredients To blend together

  • 2 cups chopped spinach leaves
  • 1 cup water

Other ingredients

  • 2 tbsp spring onion
  • 1 tbsp olive oil
  • ½ tsp oregano
  • 1 cup milk
  • Salt and pepper to taste

To serve

  • Bread croutons
  • Grated cheese

METHOD

For the Spinach puree

  1. Heat the water and boil the spinach leaves till soft.

  2. In a blender blend the spinach and water.

  3. Sieve the puree

How to proceed

  1. In a non stick vessel heat the olive oil, add the oregano, spring onions and saute for ½ minute.
  2. Add the spinach puree, milk, salt and pepper to taste. Cook for 2 minutes.

To serve

  1. Serve hot
  2. Garnish with cheese and croutons
