Veg Lasagna

INGREDIENTS
For the vegetables
¾ cup chopped zucchini (yellow)
¾ cup chopped red capsicum
¼ cup chopped onions
¾ cup boiled chopped French beans
½ cup chopped broccoli
½ cup chopped carrots
½ tbsp butter
Salt to taste
1 tsp oregano
For the red sauce
1 tbsp butter
2 garlic cloves crushed
1 tbsp Maida
1 cup tomato puree
½ cup chopped onions
½ cup chopped tomatoes
½ tsp red chilli flakes
½ cup chopped basil
2 tsp sugar
½ tsp Kashmiri red chilli powder
Salt to taste
9 Lasagna sheets (store bought)
Other ingredients
1 ½ Cups White Sauce
1 ½ Cup grated processed cheese
1 Cup grated parmesan
METHOD
For the Lasagna Sheets
Dip the store-bought sheets in hot boiling water for 30 seconds and remove them.
Make sure they don’t stick to each other and break.
Cut them to the desired shape of your baking pan.
For the Tomato Sauce
In a pan, heat butter and sauté garlic and onion.
Add in red chilli flakes and sauté.
Add in chopped tomatoes, salt, and red chilli powder. Cook for a minute.
Add in flour and stir well. Mix in tomato puree and sugar.
Mix well and cook for 2 minutes.
Finish by adding basil.
For the Vegetables
Heat butter in a pan and sauté onions and oregano.
Add in all the vegetables and cook for 2 minutes.
Partially cook them.
How to Assemble
In a baking tray, pour one ladle full of white sauce and spread.
Add in lasagna sheets. Spread some tomato sauce.
Top up with sautéed vegetables, processed cheese, parmesan cheese, and some more white sauce.
Repeat this process for one more layer.
Finally, add in the last row of the sheets. Spread the white sauce, some vegetables, and cheese.
Bake this for 15 minutes at 180°C in a preheated oven.
Serve hot.
