Vegetable Jalfrezi Recipe|Renu dalal

INGREDIENTS

  • ½ cup tomato puree
  • ½ cup cut and par boiled baby corn
  • ½ cup sliced boiled carrots
  • ½ cup sliced boiled French beans
  • ½ cup par boiled cauliflower florets
  • 1 tbsp oil
  • ½ tsp jeera
  • ¼ tsp hing
  • ½ cup sliced onion
  • 1 tsp crushed garlic
  • ½ tsp ginger green chilli paste
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1 tsp garam masala powder
  • ½ tsp kasturi methi
  • 1 tbsp chopped coriander leaves
  • ¼ cup water
  • Salt to taste

METHOD

  1. Heat oil in a pan and saute jeera, hing, ginger green chilli paste and garlic paste.
  2. Add in sliced onions and salt to taste. Cook for a minute.
  3. Toss in boiled vegetables and cook for 30 seconds.
  4. Add in tomato puree, water, turmeric powder, red chilli powder, garam masala, kasturi methi and mix well.
  5. Cook for 2 minutes, finish by adding coriander leaves and serve hot.
