VEGETABLE POHA
Poha is a staple breakfast for Indians. A great way to start the day. Amazing breakfast option which is usually consumed by every household. Do try our version of the vegetable poha. The vegetables make it more healthier and tasty too! You can put in any vegetables of your choice, but they have to boiled.

Makes
Serves 2 to 3 people
INGREDIENTS
2 cups Poha
2 tsp olive oil
¼ cup boiled green peas
½ tsp turmeric powder ( haldi )
2 tbsp boiled , peeled and cubed potatoes
1 tsp lemon juice
2 tbsp chopped coriander
Salt to taste
2 tbsp chopped onion
2 tbsp chopped tomatoes
5 Curry Leaves
½ tsp mustard seeds (Rai)
A pinch of hing
1 tsp sugar
METHOD
Soak Poha in water and instantly strain them.
In a vessel , heat oil and saute Rai till it starts crackling.
Add in the asofoetida, curry leaves, onions and tomatoes, cook till soft.
Mix in potatoes, green peas, haldi and add in the soaked poha.
Mix well and add lemon juice, sugar, salt to taste and top up with coriander.
Serve hot
