INGREDIENTS

    • ½ cup sattu flour
    • 2 tbsp wheat flour
    • 2 tbsp grated carrots
    • 2 tbsp grated beetroot
    • 1 tbsp chopped coriander
    • 2 tbsp finely chopped onions
    • 1/4 tsp ginger garlic paste
    • 1/4 tsp sesame seeds
    • Salt to taste
    • Oil to make the parathas

METHOD

    1. In a plate mix together all the ingredients
    2. With some water, knead a soft dough
    3. Divide into 4 equal portions.
    4. Roll out into parathas, with the help of some flour.
    5. With oil, roast the parathas on both the sides until well done
    6. Serve hot with curd or pickle.

Chef's Note from Renu Dalal:

The sattu, vegetables, and spices are all mixed directly into the dough — no separate stuffing step needed.
Beetroot gives a beautiful pinkish hue and carrots add sweetness. Great for lunchboxes.

Tip: Add a drop of mustard oil into the dough for authentic Bihari flavour.
Storage: Wrap in foil, keeps at room temperature for 4 hours, or refrigerate 1 day.
